1. Apple Coconut Ice-cream
Prep Time: 10 mins | Cook Time: 10 mins | Total Time: 20 mins
Ingredients:
- 2 medium apples (finely chopped)
- 2 Tbsp melted coconut oil
- 3 tbsp erythritol
- 200ml unsweetened coconut milk
- 10 almonds(finely chopped)
- 1 tsp vanilla essence
Method of Preparation:
- Take a saucepan and add 1 Tbsp of erythritol to it and let it caramelize in low flame.
- Add the apples to the saucepan and toss for 2-3 minutes until the apples are caramelized. Let it cool.
- In a blender add the caramelized apples, coconut milk, coconut oil, vanilla essence and blend until it turns smooth in texture.
- Pour in a large bowl and freeze for 4 hours.
- After 4 hours take the frozen mixture, add to the blender, and blend until it turns smooth, now add the chopped almonds and mix well.
- Freeze the blended mixture for 2 hours and after that, the apple coconut ice cream is ready to eat.
- Scoop it into a bowl and enjoy it.
2. Cinnamon Orange Lava Cake
Prep Time: 10 mins | Cook Time: 25 mins | Total Time: 35 mins
Ingredients:
- 3 Tbsp butter
- 2 Tbsp olive oil
- 1/4 cup 70% cocoa chocolate bar
- 2/3 cup whole-wheat flour
- ½ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- ¼ tsp Pink Himalayan salt
- 4 cup erythritol/stevia
- ½ tsp vanilla essence
- 1 tsp cinnamon powder
- 4 tsp orange zest
- 2 eggs
Method of Preparation:
- Preheat the oven for 5 min at 400 degrees.
- In a large bowl, add all the dry ingredients such as wheat flour, unsweetened cocoa powder, baking powder, erythritol, pink Himalayan salt, cinnamon powder and mix well, keep aside.
- Take a double boiler, add butter and melt it. once it cools down add eggs and whisk till it combines well.
- Pour the egg butter mixture into the dry ingredients, add orange zest, vanilla essence and mix well until you get a batter consistency.
- Use the cupcake molds and pour the batter to 1/4 th capacity.
- Now take the chocolate cubes and place them into the batter.
- Cover the cubes with the cake batter and bake for 15 minutes at 400 degrees until the cake turns out to be fluffy.
- Once cooked, allow it to cool for 10 minutes, and then you can enjoy the cake.
3. Espresso Granita
Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Ingredients:
- 3 tbsp coffee powder
- 1⁄2cup erythritol
- 1/2 cup whipping cream
- 1⁄2 cup shaved dark chocolate(70 % cocoa)
- 5 almonds (finely chopped)
Method of Preparation:
- In a pan take 200 ml of water, add f erythritol to it.
- Once the water starts boiling add the 2 tbsp coffee powder and boils it for 10 mins.
- Pour the cooled coffee brew into a tray and freeze for 15 minutes.
- Take the whipping cream, and whip till it turns light and fluffy.
- To this add the erythritol and remaining coffee powder.
- In a tall glass add a tsp of crushed almonds followed by the shaved dark chocolate.
- Add a scoop of coffee flavoured whipped cream to it.
- Crush the frozen coffee brew and add a generous amount of it to the whipped cream topping.
- Garnish the granita with chopped almonds and shaved chocolate.
- Espresso granita is ready to eat!
Note :
The above-mentioned recipes are low in calories. Hence they can be enjoyed once a week or so within having the guilt of putting on weight. However, the mentioned quantity for preparation must not exceed.
