Ingredients:
- 4 portions of cod
- 4 ripe tomatoes, peeled and quartered
- 2 onions, cut into 1/4 inch quarters
- zest of 1 orange
- 1 Tbsp. extraversion olive oil
- 2 tsp. dried thyme leaves
- 1/2 tsp. Kosher salt, divided (omit if on a sodium free diet)
- pepper to taste
Instructions:
- Preheat the oven to 400 degrees F.
- In a large bowl, combine tomatoes, onion, orange zest, olive oil, thyme, and 1/4 tsp. Kosher salt. Toss.
- Place on a baking sheet and roast for about 40 minutes or until onions are golden.
- Remove from the oven and increase the temperature to 450 degrees F.
- Push the vegetables aside, add fish, and season with the remaining 1/4 teaspoon salt and pepper; spoon the vegetables over the fish.
- Return the baking sheet to the oven and bake until the fish is opaque in the center, about 10 to 12 minutes.
