Ingredients
- 2 teaspoons olive oil
- 2 teaspoons butter
- 1 cup thinly sliced fennel bulb
- 1/4 cup thinly sliced red onion
- 1 garlic clove, minced
- 6 cups fresh baby spinach
- one-fourth cup minced fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a large cast-iron or another heavy skillet, warm oil and butter over medium-high heat. Combine fennel and onion; cook and stir until tender. Add garlic; cook one minute longer. Add remaining ingredients; cook and stir just until spinach is wilted, 4-5 minutes.
