Khaman Dhokla is a renowned snack from Gujrat, India. They are small slices of the cake made with besan, which is also known as gram flour or chana dal flour.
The cake is drizzled with green chilies and ginger. Post it, steam the batter to make a soft, spongy cake. For added flavor, you can mizzle lemon juice over top along with ginger, cilantro, coconut shreds, and tempered mustard seeds, curry leaves, and green chilies.
A cozy soft and spongy savory chickpea flour snack cake tempered with spices. This cake is ready in 20 minutes, making an excellent breakfast, snack or party appetizer. This delectable vegan and gluten-free bites can be steamed, baked or even cooked in the microwave. Simply yum!!!
Ingredients
Milling your own flour
- 2 cups chana daal
Khaman Dhokla Batter
- besan/gram flour 2 cups
- oil 1 tsp
- lemon juice, freshly squeezed 1 tbsp
- ginger, grated ½ tsp
- green chillies, chopped 1 tsp (optional)
- 1 tsp sugar
- salt to taste
- 1 tsp fruit salt / baking soda
- a pinch of turmeric
- water 1 cup
Tempering
- 1 tbsp oil
- 1 tsp mustard seeds
- urad dal 1 tsp
- green or red chilies, halved (optional) 2
- curry leaves 8
Garnishing
- 1 tbsp grated coconut (optional)
- cilantro, chopped
Instructions
Step 1: Grind your flour – You can either mill your grains or use store-bought gram flour. If using a grain mill, switch on the Grain Mill to Pastry mode, before pouring the grains into the mill. Gather the flour from the storage container.
Step 2: Prepare Batter – Combine the flour, lemon juice, ginger, green chilies, oil, salt, sugar, and water to make a smooth batter in a mixing bowl. The batter should be the uniform of a pancake batter. Once the batter is smooth, adjoin fruit salt or baking soda to quickly ferment the batter. Shuffle again until the batter gets bubbly.
Step 3: Grease the mold – Now oil the container you are using like, springform pan, muffins molds, baking tray or cups and pour the batter. Cook it by choosing one of the methods below.
Step 4 : Cook it – Steaming it in the pressure cooker, baking it in the oven or microwaving it.
Step 5 : Temper and Adorn – Temper it with flavored oil. Warm oil in a small container, throw in the tempering mix and once you hear the crackling, pour it over the khaman dhokla. Allow it to cool for 10 minutes. Decorate with cilantro and /or shredded coconut. Once cooled, remove from the mold or cutting pieces. Serve warm or at room temperature.
